Baby corn & Peas Pulao

A mildly spiced, coconut flavored with coriander, a hint of the tangy tomato with the hero of the dish Baby corn – Pulao.

Baby corn Peas Pulao recipe :

Pulao is a kind of dish that is usually liked my many, am pretty sure you do too. In fact, it is one of the easiest rice dishes that can be enhanced or flavored according to your own taste. That is one of the reason we, in my family, prepare it once or twice a week with different flavors.

This is a very simple pulao recipe with very few veggies, however you can add any veggies of your choice. You can also prepare this with leftover baby corn.

You can serve this with any raita like tomato raita, cucumber raita etc, or simply garnish with grated coconut and coriander leaves and serve 🙂

Baby corn Peas Pulao

  • Servings: 2-3

NOTE: 1cup = 250ml

What you will need?

For the paste :

  • 1/4th cup grated coconut
  • 2-3 green chillies
  • 4-5 garlic cloves
  • 1 tbsp ginger
  • 1 medium-large tomato
  • 4 tbsp coriander leaves

Spices :

  • an inch of cumin
  • 3-4 cloves, lavang
  • 1 star anise
  • 2-3 green cardamom
  • 1 bay-leaf

Others :

  • 1 cup basmati rice
  • 2 tbsp oil
  • 2 medium onions
  • 1/2 teaspoon turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/4 cup green peas
  • a pack of baby corn, 10 – 15
  • 2 tbsp coriander leaves – for garnish
  • 2 tbsp grated coconut – for garnish
How to do this recipe?
  1. Wash the basmati rice properly with enough water and keep it soaked in water, for 20 – 30 minutes.
  2. Chop the onions and baby corn and keep aside.
  3. Take all the ingredients under paste, 1/4th cup grated coconut, 2-3 green chillies, 4-5 garlic cloves,1 tbsp ginger, 1 medium-large tomato, 4 tbsp coriander leaves. Grind, until it becomes a chutney like consistency. Keep it aside.
  4. Heat 2 tbsp oil in a pressure cooker, add all the spices and saute for 2 minutes.
  5. Add the onions and saute until it turns slightly brownish.
  6. Now, add the chutney like paste and saute for 3 minutes.
  7. Add  1/2 teaspoon turmeric powder, 1/2 tsp red chilli powder, 1 tsp coriander powder and mix it evenly.
  8. Add peas,baby corn and saute for a minute.
  9. Add the rice and mix , Add Salt as required. Then add enough water.(I added 1 and 1/4 cup)
  10. Pressure cook it for 3 whistles, garnish with grated coconut,coriander leaves and serve.
Baby corn Peas Pulao Step-wise:
  1. Wash and soak basmati rice for 20-30 minutes.
  2. Chop onions and baby corn.
  3. Take  1/4th cup grated coconut, 2-3 green chillies, 4-5 garlic cloves,1 tbsp ginger, 1 medium-large tomato, 4 tbsp coriander leaves and grind until it becomes a paste. Keep it aside. ( Note : Add more or less chillies depending on the spiciness)

     

  4. Heat 2 tbsp oil in a pressure cooker, add all the spices and saute for 2 minutes.3
  5. Add the onions and saute until it turns slightly brownish.

6. Add the chutney like paste and saute for 3 minutes.

7.  Add  1/2 teaspoon turmeric powder, 1/2 tsp red chilli powder, 1 tsp coriander powder          and mix it evenly.7

8. Add peas,baby corn and saute for a minute. 8

9. Add the rice and mix , add Salt as required. Then add enough water.(I added 1 and 1/4        cup).

10. Pressure cook it for 3 whistles, garnish with grated coconut,coriander leaves and                serve.featured_2
